I have a new, fairly sophisticated student who sings, plays guitar well and knows a lot of theory and now she wants to learn classical piano. Any recommendations for a method that isn't too young seeming. Thanks!

There are a lot of music samples to look at.

Here's a couple reviews I did about them...

I also have a couple adults in Piano Pronto and they absolutely love them! They love that it is so classical based but has a mix of other genres as well.

If she's serious about learning to really play the piano and not just learn to read and play from lead sheets or play a tune in one hand with the other hand accompanying with a few chords, check out Frances Clark's Keyboard Musician for the Adult Beginner. It moves quickly and will get the job done. There's room to supplement with other music too.
