I recently looked at a used Gulbransen piano. It is a 1956 model that looks to be in pretty good shape with a new keyboard put on recently. The condition is very good. What would be the most I should pay?

I would suggest you speak to a reputable piano technician in your area and pay him to inspect the instrument and give you an opinion as to condition and worth.

Also, you may wish to consult The Piano Book by Larry Fine. He has excellent "buyer beware" information for those considering purchase of a "pre-owned" piano.
